Easy Baking Powder Biscuits

Adapted from Company’s Coming’s ‘Muffins and More’ Cookbook:
Ingredients:
Preparation:
- Stir dry ingredients together in a BIG bowl
- Add the optional stuff (see below)
- Add the wet ingredients
- Mix until you get a fairly firm ball (add a bit of flour if it is a bit sticky
- Turn out onto a floured countertop and roll out to 1/2 inch thickness
- Cut into squares and place on an ungreased cookie sheet
- Bake in a preheated oven at 400°F. for about 15 minutes or until the tops are golden brown
- Eat warm or can be refrigerated for up to about 5 days (unless Beano gets to them…
)
Optional stuff that works:
- The cookbook says 2 Cups of grated Cheddar Cheese (that works)
- 2 Cups of cranberries or a 16 ounce can of cranberry sauce is awesome!
- 1 Cup of Cheddar and 1 Cup of Parmesan is VERY GOOD
- 2 Cups of Raisins work well
- 2 Cups of Chocolate Chips (ok this is sinful but damn it is good)
- 2 Cups of banana chunks
- 1 Tbsp. of minced garlic is good
- 1 Tbsp. of mixed spices are good (I especially like the Epicurean Fajita Spice)
- Ok you get the point – this is a quite flexible recipe!
Serves: Depending on how big you like your biscuits you can get anywhere from 24 to 60 biscuits.
